Just peel and chop any apples you have and cook them in a pot uncovered with some liquid covering about 1/3 of the apples. I like to use a good apple juice, like Martanellis, but water, white wine, ginger ale, pretty much anything clear will work. Simmer the apples until they are soft, then puree in the food processor. You could stop there, but I like to throw it back in the pot and add some brown sugar, lemon juice, maybe some cinnamon, some vanilla bean, and a few pats of butter. Will stay good for a week in the fridge, or up to a year canned.
